I have been in this competiition last year. It was a very good expirience having a relation with well talented japanese and international sushi chef. Having this kind of competition make us more awair of how we develop the skills understand and respect of sushi tradition that japanese are proud of. We international sushi chef have a responsibilty to implement strick hygiene and understand the product we are using. Base by tradition and filosofi of edomae style. We sushi chef have a responsiblity to show som ideas that we have in our respective country, so that sushi will prosper as one of the well respected food in the world. to achive this fusion are to understand the basic edomae style and hygiene technics.
